Chia Pudding with Berries
Make it the night before and breakfast is done. Layer it in jars for a grab-and-go week.

Ingredients
- 9 Tbsp chia seeds
- 3 servings protein powder (optional)
- 2¼ cups unsweetened soy milk
- 1½ tsp vanilla extract
- 1 cup mixed berries (plus more for garnish, if desired)

Make the chia pudding: in a medium bowl, stir together chia seeds, plant milk, protein powder, and vanilla until well combined. Let sit 10 minutes, then stir again to break up any clumps. Cover and refrigerate at least 2 hours, ideally overnight, until thick.

Build the cups: spoon the chilled pudding into small glasses or jars, leaving about ½ inch at the top.

Top with berries and any other toppings you like — granola, nut butter, banana, coconut.
Notes & tips
- Keeps 4–5 days in the fridge.
- Too thick the next day? Stir in a splash of plant milk to loosen.
